If you don't have an ecliptic projector you can just look at a gate and line yourself up with the plane that way. I hear the Borons are going to start a galactic boycott of clothing... ...with SEXY results. All I've heard so far that I would consider a new feature and not a bug fix is the ability to get ship stats at a shipyard before purchasing. They've mentioned tweaks to AI and the economy too though I think.

I don't particularly like the idea of gaining combat rank for what my AI ships do. If I'm 10 sectors away when one of my AI Nova's whacks a pirate I shouldn't gain reputation for it. There's a difference between leadership (commanding from the bridge of a cap ship) and piloting skills (dogfighting)....

Yes. The way I do this is to scroll down through ship details (I believe). Near the bottom of one of the lists you can set monitors for turrets and the like and it's easy from there to set up a turret to a monitor while keeping the cockpit on the main.
